Introduction

Toulouse is a city with a tinge of pink, its old part built largely from pink brick, together with a small measure of reddish-orange, which has earned it the nickname, "the pink city." Its other attribute is its food, famous far and wide, highlights of which include foie gras, a delicacy that consists of the liver of an overfed goose; Saucisses de Toulouse, a local dish centered around sausage; Cassoulet Toulousain, a white bean and pork stew; and a cabbage soup with poultry known locally as garbure. But apart from its gastronomy and the unique coloring of its buildings, Toulouse is notable, too, for its 13th-century university, which is one of the oldest in Europe, and its space center, which is the largest in Europe and second-largest in the world. The city itself is centered around Place du Capitole, Toulouse's main square, upon which stand the Capitole de Toulouse - seat of the city's government - the Theatre du Capitole, an enormous and hugely popular market, and Hotel d'Ville and other hotels, shops, restaurants and cafés that rim the square. The city, besides, buzzes with a youthful verve, as it should, as the capital of the Midi-Pyrénées, the largest region in metropolitan France.
