The Parador de Ronda is one of the more incredible places – hands down – to call it a night in Spain. The hotel is perched on the edge of the Tajo gorge between the Plaza de Toros and the Puente Nuevo in what was Ronda’s town hall, an expansive stone construction with three floors of arcaded balconies looking out over the valley and gorge. Stained walnut floors and contemporary accents characterize the rooms, which spare no essentials. The swimming pool looks as if it might drain right over the side of the cliff and from it are splashy views of the old whitewashed Arabic town across the gap.
