Named after a classic Tuscan dish (chicken liver and egg stew), Cibreo is split between the restaurant on Via A. del Verrocchio and the equally tasty trattoria on Via dei Macci (112r, contacts as above, closed Sun, $$). Specialties include the polenta alle erbe verdi (a herby polenta), sformato di patate e ricotta al ragù (a cone-shaped mix of potato and ricotta cheese served with a spicy meat sauce), calamari in inzimino (stewed squid) and the torta al cioccolato; only the difference in décor explains the difference in price. Booking recommended.
